corn dogs

For lack of anything to make for dinner tonight I took a pkg of Jiffy corn bread mix and some hot dogs and put them in muffin cups. 1/3 of a hot dog in each one. the dough cooked up around the dog. The kids loved them. One site online suggested making them and freezing them to warm up another time. Although it was pretty quick to just make up a batch (about 17 minutes in the oven).

Good idea. I have a recipe and have tried to make corn dogs before but always had a hard time getting the batter to stick to the hot dogs while they deep fried. It would always slide off.
Did you cut the hot dog up in pieces so it was mixed? or just put a whole third and the batter on top/bottom?

I greased muffin cups and put in about 2 tbs of batter in the cup and plopped a third of the hot dog on top. As the batter cooked it rose and cover the hot dog.

I made another batch tonight with the rest of the hot dogs from the pkg. I threw them in freezer bag. We'lls ee how well they reheat.

I sliced up the jalapeno cheese hot dogs and put a bunch in each muffin tin with the cornbread mix. The gkids ate a mountain of em ! Now they want them again when they come out for Sunday lunch.

I did reheat some the other night from frozen. Nuked them and then tossed them in the oven for a few minutes to crisp up again. They were good, but honestly, took about as long as it took to make originally, which was fast. So probably we'll just stick to making them fresh.
